Pardas Sus Scrofa, Penedès, Spain 2019 (750ml)
Light to medium purple in colour, with aromas of red and black berries, this is an easy and supremely tasty wine. Distinctive Sumoll tannins are balanced with ﬂeshy, bright fruit. As with all Pardas wines, Mediterranean herbs and refreshing salinity are highly evident on the palate.
ABOUT THE WINE
Using 100% Sumoll from chalky-clay soil, harvest is performed by hand. Destemmed and macerated at a controlled temperature. Fermented with local yeasts in stainless steel deposits at 20ºC. Aged in century-old concrete deposits for 4 months.
