Brezo Blanco is a fresh, mineral, and elegant wine. It is aged on its lees for 5 months, which helps to give some more character and fullness to the wine. Aromas of apple, pear, lemon, and lime and with a lightly toasted notes from the time on lees. Textural yet thirst-quenching with savoury complexity on the driven finish--this is a joy to drink.


Gregory Perez came to Bierzo from his native Bordeaux in 2001 to work as an enologist for a large winery. By 2007, Gregory had begun to reject the new winemaking methods, and set out to produce Bierzo wines that express the Bierzo terroir. He works only with native grapes, farming them as organically as possible, and working with natural winemaking methods, such as fermenting all of his wines with wild yeasts and working with very little sulfur during the winemaking process.
